Observed small cold prep table near kitchen entrance containing beverage toppings/popping boba with ambient air temperature ranging between 34*F-42.9*F. Top right section at 34*F ambient air temperature and bottom left section at 42.9*F. Unit not observed to be holding TCS food items. Non-TCS popping boba observed to be at 45*F. Discussed with PIC repairing unit/cleaning coils to ensure unit is properly cold holding.

Inspector's notes

Observed two sanitizer buckets with a chlorine concentration at 200ppm. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection. Also discussed ensuring wiping cloths are stored fully submerged in sanitizer buckets instead of on counters/outside of buckets. Corrective Action: Corrected at time of inspection.
