Observed employee start washing soiled rubber floor mats with soap and water outside establishment, with soap running off into nearby rocks. Discussed with PIC that disposal of wastewater via any means that is not through a designated waste drain or sanitary sewer is prohibited due to the risk of contaminating ground water and water in storm drains. PIC instructed employee to wash rubber floor mats in mop sink inside establishment. Corrective Action: Corrected at time of inspection.

Observed two sanitizer buckets with wiping cloths being utilized located throughout establishment exceed 500ppm of quaternary sanitizer. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Per PIC, one quaternary tab is utilized for each bucket. Discussed setting up one bucket with one quat tab, splitting between two buckets, and diluting with water, or utilizing sanitizer with approved concentration from 3-compartment for buckets. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrective Action: Corrected at time of inspection.

Observed an employee wash, rinse, and sanitize a pitcher and then immediately spray it off and put it away. The rinsing of cleaned and sanitized utensils and equipment in a manner that may contaminate the surfaces before they are used, such as running them under a faucet or by dipping them in a vessel of water, is prohibited. The application of a post-sanitizing rinse is restricted to warewashing machines because there will be little opportunity for contamination of the potable water rinse if applied within the confines of a compliant warewashing machine. Person in charge indicated they would retrain staff not to rinse dishes after sanitizing. Corrective Action: Correct prior to next routine inspection.
