Inspector's notes

In the walk-in meat cooler, observed a box of raw chicken stored above an open plastic tub of pork ribs on a metal shelving unit. Adjacent to this rack, observed boxes of raw beef stored above packaged cut nopal leaves and crates of cooked tamales in wax paper. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. PIC moved all RTE foods that were in the raw meats section of the walk-in cooler over with other RTE foods. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a handwashing sink next to the meat display case that is starting to become detached from the wall. Discussed with person in charge to recaulk the handwashing sink with caulking so that the sink is smooth and flush to the wall. The person in charge will reseal the sink with caulking. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection.
