Observed the cook wipe down the counters with sanitizer, put on gloves, then proceed to make a customer's order without washing his hands. Employee properly washed hands at handwash sink at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cooked onions, spinach dip, philly cheese, and queso with an internal temperature range of 110F-119F in the steam table, and on the flat top. It was observed that the hot water bath that was being used, for the items on the flat top, to keep the food items hot was very low, and had a temperature of 119F. Also for the same food items on the steam table were in two metal containers and were not in contact with the hot water. Per PIC, the food items had been hot holding for less than 2 hours. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
