Observed establishment using chlorine for sanitizing dishes without having test strips available. Establishment had pH test strips. Test strips must be available in the establishment for the chemical used for sanitizing food contact surfaces. Correct prior to reinspection on February 26. Corrective Action: Correct prior to re-inspection.
