Observed tomato sauce cooling in ice bath at 74 °F. Food had been prepared about 2.5 hours prior as per staff. Cooked time/temperature control for safety (TCS) foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Discussed importance of monitoring cooling foods with person in charge. All TCS foods improperly cooled were discarded by PIC at time of inspection. Observed multiple covered and stacked containers of assorted cooked pastas/ 52-60°F cooling in the walk in cooler. According to the person in charge the pasta had been cooling for 2 hours. Observed thin pizza sauce containing parmesan cheese/57°F in the upper portion of the pizza station prep refrigerator. According to the chef the pizza sauce was made 30 minutes ago.

Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. The cooling pastas were uncovered and unstacked to allow for rapid cooling. The thin pizza sauce was moved to the walk in cooler to rapidly cool. The upper section of the prep refrigerators are not designed to rapidly cool TCS foods. Corrective Action: Corrected at time of inspection.
