Observed sour cream holding 52F in the assembly line cooler. PIC showed the inspector times for all the items placed into the unit. The sour cream has an 8 hour holding time. Discussed 4 or 6 hour time maximums if using 4 or 6 hour time as a public health control. PIC did not provide inspector with a time policy. Inspector discussed the policy via guidance document and emailed it to the Operator. The sour cream was placed on the line at 12:30pm to be discarded by 8:30pm. PIC placed ice into the container, surrounding the bottle. TCS food must be holding at 41F or below when cold holding. Correct By: Corrected At Time Of Inspection,Repeat Violations: 1st
