According to PIC (person in charge), tomatoes and sauce had been prepared 2 hours prior and were placed directly in the reach-in. All prepped foods must be placed back in the walk-in to cool to 41*F and below before they are moved to reach-in units as these units are designed to hold temperatures, not cool foods. Observed prepped pizza sauce and sliced tomatoes in the walk-in in deep, lidded containers also prepped 2 hours prior. Discussed placing prepped foods in shallow containers and leaving uncovered in the walk-in to facilitate proper cooling. Containers were uncovered at time of inspection.
