Observed covered container of meatloaf cooling in display cooler during inspection. Person in charge said item had just been prepared, item measured 145 degrees F. Meatloaf was uncovered and moved to prep cooler at time. Please ensure food items are cooled in shallow, uncovered containers in enclosed coolers to ensure most efficient heat transfer. Corrective Action: Corrected at time of inspection.
