Observed no CFPM on site during the inspection. Operator used to be certified, but certificate expired in 2025. Informed person in charge (PIC) that a Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a container with chorizo on top of the hot holding unit with internal temperature of 105°F. Informed person in charge (PIC) that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC stated the chorizo has been sitting out for over 3 hours. PIC stated they were planning on reheating the chorizo. Informed PIC that reheating would have to take place within 2 hours of when the food entered the temperature danger zone; after 2 hours, the food must be discarded for safety reasons. PIC discarded chorizo at time of inspection. Corrective Action: Corrected at time of inspection.
