Observed boiled eggs and marinara sauce from 2/12. Time/temperature control for safety foods should be held for a maximum of 7 days, prep date + 6 days, to prevent the growth of pathogens. PIC stated this is the freezer date. Discussed food pulled from the freezer should have 2 date marks, the date the food was placed into the freezer and the date the food is pulled from the freezer.
