Observed cut watermelon in reach in cooler and walk-in cooler without date marks during inspection, person in charge was unsure of when they were cut and both items were discarded at time. Please ensure all time/temperature controlled for safety food items are date marked to be discarded 6 days after the date that they have been prepared or removed from packaging. Corrective Action: Corrected at time of inspection.

Establishment had no device for measuring sanitizing temp for high temp warewashing machine during inspection. Theremometer was obtained from other kitchen at time. Please ensure device for measuring temperature of sanitizing rinse at the surface of wares (high themp, waterproof thermometer capable of holding max temperature) is available at all times. There are no complex cooking processes being used. The permit class is being changed from a 4 to a 3. This change will reflect on the next billing cycle.
