Inspector's notes

Observed reach in fridge unit to have multiple TCS foods out of temperature. Person in charge stated that items had been put in the unit the day prior. TCS foods include ham egg cheese croissant sandwiches, sausage egg cheese biscuit sandwiches, and chargrilled cheeseburger measure at 48*F-50*F. chicken Swiss sandwich was 47*F-51*F. Western omelet sandwich was 51*F-54*F. tuna salad sandwich 47*F-54*F. Turkey and pepper jack sandwich 47*F. Chicken salad sandwich 47*F-52*F. Egg salad sandwich 47*F-54*F. Ham and Turkey sub 51*F-54*F. Hard boiled eggs 47*F-53*F. Prepackaged salami and cheese 44*F-55*F. Prepackaged hummus was 50*F, and prepackaged sharp cheddar 45*F-55*F. Food temps were observed to be lower towards the back of the fridge. Unit was set to 23*F and had an ambient temp of 48*F. Person in charge put work order in for unit and will not put TSC foods in fridge until unit is repaired. All TCS foods improperly cold held were discarded by PIC at time of inspection. Person in charge put work order in for unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
