Observed potato slicer attached to wall in kitchen with dried food accumulation. Person in charge stated the slicer is used every couple months. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed wet wiping cloth on cutting board at time of inspection. Establishment did not have chlorine or sanitizer available to make proper concentration of sanitizer for wiping cloths or sanitize dishes. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations (Chlorine 50-100ppm). PIC obtained chlorine at time of inspection. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed employee manually washing dishes with dawn soap in food prep sink with no sanitization step. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Explained to operator that prep sink is only to be used for food prep, not washing dishes. Food-contact surfaces were properly sanitized at time of inspection in three compartment sink. Corrective Action: Corrected at time of inspection.
