Observed a large build-up of ice behind and underneath the compressor in the walk-in cooler. Ice build-up is significant to the extent that it is preventing one of the motors from blowing. Discussed putting in a work order in order to ensure that the ice does not grow and further obstruct the functionality of the unit. Walk-in cooler is equipped with three compressors and was observed to have the capacity to maintain temperature <41*F during the time of inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Various individually packaged sandwiches in island refrigerator in middle of store were measured to be between 46-48*F. Per PIC, the island refrigerator is regularly monitored and was observed to be within temperature prior to lunchtime. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed island refrigerator with fluctuating temperature. Side closest to soda machines fluctuated between 39-49*F. Side facing store entrance fluctuated between 45-51*F. All temperatures were measured with minmax thermometer. Manager put in a work order for unit and moved all items from the unit to walk-in cooler. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. **Re-inspection scheduled for 1/23/26** Please notify inspector with any updates regarding the progress of the corrective action or for any questions.

Observed pallets of commercially packaged soft drinks and water stored under the compressor in the walk-in unit. Compressor was in a defrost stage and was dripping large amounts of water, causing it to drip on the pallets of drinks and then pool on the floor. Person in charge submitted a work order for the repair of the unit during time of inspection. Advised person in charge to reorganize drinks and coordinate with vendors to store drinks away from the unit. Corrective Action: Corrected at time of inspection.
