Inspector's notes
In the walk-in cooler and cook-line reach-ins, observed an opened deli ham dated 5/3 (12 days prior to inspection) and no dates on open packages/prepared cooked pasta salad, sliced ham, and spring salad (cut leafy greens). PIC discarded the spring mix and the hams, see embargo form, and dated the pasta salad. The Food Code requires that TCS foods be discarded 7 days after opening/prep when held at 41F or less. Listeria is the pathogen of concern, which cannot be observed by looking at the food in question. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or once cooked/prepped, such as noodles or proteins. Adding 6 to the start date (6+1) determines the discard date. Corrective Action: Corrected at time of inspection.

Observed dried food debris and soil on equipment stored as clean in the prep area, such as: the blade of the can opener, blade and food-contact surfaces of the deli slicer, and the blades of knives on a magnetic strip. PIC relocated the soiled equipment to be washed and sanitized and will remove equipment that is not used. Suggested inspecting equipment in better detail and with more sufficient lighting before storing as clean and ready to use. Equipment food contact surfaces and utensils shall be clean to sight and touch. Discussed the hazards of TCS foods left on equipment that is stored at room temperature. Many foodborne illness pathogens grow rapidly in the danger zone (41-135F). TCS food debris remaining on clean equipment is a potential source of contamination for foods that come into contact with the equipment. Corrective Action: Corrected at time of inspection.

Observed an ice bath with portioned bowls of cut melons on a table in the dining room, with internal temperatures of 44-53F, probe thermometer, verified by PIC. According to PIC, the cut melons are portioned and placed into the ice bath during breakfast for service to residents; the melons will be discarded after breakfast service. Discussed using time as a control for TCS foods that will not be maintained at 41F or below during service and protecting exposed food in the dining room with lids, sneeze guard, etc. to prevent contamination. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. The clam chowder was prepared yesterday, placed in the freezer to cool, and then placed in the walk-in for continued cooling. The containers may have been too large and deep for the cooling to occur properly. The containers were also covered; one with a lid and the other with tightly wrapped plastic wrap.
