Inspector's notes

Observed rainbow california roll, crunchy roll with internal temperatures between 44 and 47 degrees Fahrenheit in the for sale case in the store. PIC moved rolls to the walk in refrigerator to cool to 41 degrees Fahrenheit. Discussed keeping the lids cracked open to help cool. TCS foods shall be held cold at 41 degrees Fahrenheit or below to prevent microbial growth. Corrective Action: Corrected at time of inspection.
