Inspector's notes

Observed shredded cheese, sour cream, diced tomatoes, guacamole, mini chimis and portioned meat with internal temperatures between 47 and 50 degrees Fahrenheit at the time of inspection. Kitchen manager and employee moved all items from the main line cold holding table to the walk in to cool items to 41 degrees F. TCS foods shall be held at 41 degrees Fahrenheit or below to prevent microbial growth. Corrective Action: Corrected at time of inspection.

Kitchen manager switched sanitizer bottles at the dishwasher, and after priming the machine, final concentration was 100 ppm. Quat dispenser dispenses at about 150 ppm. Discussed switching often or adding more from the bottle and having dispenser adjusted to be more within the 200-400 ppm range. Correct By: Corrected At Time Of Inspection
