Inspector's notes

Observed fried fish the cook stated was fully cooked with a final cook temperature of 96*F, 100*F and 110*F when measured with the probe thermometer. All raw animal proteins must reach a final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. PIC placed the fish back into the oil to continue cooking until a final cook temp of 145*F was achieved. Corrective Action: Corrected at time of inspection.
