#18 — Proper Cooking Time and TemperaturesPriority3-401.11

Inspector's notes

Observed fried chicken with a final cook temperature measured at 119*F, 138*F and 146*F when measured with a probe thermometer. Observed PIC use a probe thermometer to measure the chicken cook temp by inserting the stem of the probe thermometer all the way through the thickest part of the breast piece and out of the other side. Advised PIC to identify where the probe is gathering temperature data from to ensure that portion is inserted into the thickest part of the chicken. Advised PIC to observed temperatures and the thickest part and near the bone, if applicable. All raw animal proteins must reach a final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code (165*F for poultry). PIC placed the chicken back into the fryer until a final cook temperature of 165*F was observed. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed an ambient air temp in the left side of the deli display cooler holding at 48*F when measured with a min/max thermometer. Inside the cooler, observed TCS foods holding between 51-58*F on the top shelf when measured with a probe thermometer including; various deli meats (ham, turkey, pastrami, roast beef, chicken and raw bacon. On the lower shelf, observed chubs of sealed deli meat measuring 44-48* F internally. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Observed foods on the west side of the cooler holding at 41*F or below including salads, noodles, tamales etc. Per PIC, the establishment uses a remote monitoring system to monitor all cold cases. Observed the system showing the average air temp at 31*F. Advised PIC to investigate thermostat settings and placement. All TCS foods improperly cold held were discarded by PIC at time of inspection (see embargo). Advised PIC to store TCS foods in the walk in cooler with the glass side doors for quick access until repairs are completed. Corrective Action: Corrected at time of inspection.
