Observed approximately #250 of improperly cooled food from prep between 10/25-10/27. Temperatures ranged from 45-52*f degrees. shredded cheese stored in three large deep covered containers found 52*f degrees. Red chicken 10/25, 45*f degrees. Machaca beef with vegatables 10/27 found 47*f degrees. Green Chile pork 10/25 found 45*f degrees. Cup green salsas stored in two very deep large container found 46*f degrees. All Items embargoed at time of inspection. Cooling must be complete 135-70*f degrees in 2 hours and 70-41*f degrees in an additional 4 hours. If cooling items down from no cook and only prep 4 hours applies.
