Observed standing refrigerator used to store corndogs in kitchen with an ambient temperature of 50-55*F. Person in charge lowered the temperature settings and the refrigerator and the ambient temperature was checked with a min-max thermometer. After 10 minutes, the lowest ambient temperature recorded was 52.5*F. Instructed PIC to use the walk-in refrigerator for cold storage. PIC stated that they will schedule a maintenance visit for the refrigerator. Corrective Action: Correct prior to re-inspection. ***Re-inspection scheduled for 2/18/24

Observed corndogs holding at 52*F in standing refrigerator. Corndogs were stored in refrigerator for >4 hours. PIC voluntarily discarded the corndogs. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
