Observed 500+ PPM quaternary ammonium sanitizer being used in the 3-comp sink at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrective Action: Corrected at time of inspection.

Observed mature German cockroach carcass located in the floor drain directly beneath prep sink in the back of house. PIC removed the carcass from the premises at time of inspection. Discussed active pest control procedures with PIC. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by next routine inspection. Observed milk, half & half, heavy cream, and cold brew in reach in below the register with temperatures between 54 to 56*F at time of inspection. Per PIC, all items were in the reach in since the day prior to inspection and voluntarily discarded at time of inspection. Observed ambient temperature of the reach in cooler at 53*F at time of inspection. Establishment has multiple working reach in coolers, a freezer and a prep table that are able to keep TCS food items at 41*F or below at time of inspection. Establishment stated they will discontinue use of the non-working reach-in cooler until it is able to maintain TCS food items at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Person in charge (PIC) moved raw pooled egg containers to bottom shelf below all RTE items at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
