Inspector's notes

Observed the metal canisters of cream and half and half being held on time as a control and missing the time stamps. Staff member stated that the creamer had been put out two hours prior to inspection. Informed staff and PIC that the time stamp must be put on the containers every time it is put out. Staff member properly time stamped the cream and half and half at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

In the small cooler in front of the espresso machine, observed in house cold brew coffee, sour cream packets, breakfast burritos, breakfast sandwiches, cows milk and half and half creamer having internal temperatures of 48-51*F. Ambient temperature of the cooler was at 51*F and states all the food was in the unit for at least 4 hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection. 2ND REPEAT VIOLATION.

Per PIC, food items are obtained from an outside food vendor and could not provide invoices at the time of inspection. The packaging did not display any USDA or ADA labeling. The product was placed under an embargo and removed from sale. The product was stored in back reach-in cooler and may not be moved until MCESD releases embargo hold. Must provide invoices for product. Corrective Action: Correct prior to re-inspection.

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Establishment has adequate other coolers for operation and will discontinue use of non-functioning cooler until repaired. Corrective Action: Corrected at time of inspection.
