Talked to manager about cleanability of surfaces, the manager removed the cardboard and is now using the stainless steel strainer material directly in the hopper. Ensure food contact surfaces in the kitchen as easily cleanable and non-absorbent. Corrective Action: Corrected at time of inspection.
