Also observed green salsa cooling for 3 hours with an internal temperature of 102*F. Green salsa was also cooling in 5 gallon buckets. Discussed proper cooling methods with PIC and discarded salsas at time of inspection. Proper Cooling must be from 135*f to 70*F within 2 hours and from 70*F from 41*f within 4 hours. According to person in charge, a ice wand was used to help cool down but was not used at time of inspection. PIC moved salsa into large shallow container to ensure salsa cooled properly.
