Observed quiche with internal temperature of 59 - 67F in a cold holding display case by the front entrance. The person in charge stated the quiche had been placed into the display case from the walk-in cooler less than 1 hour ago and returned the quiche to the freezer for rapid cooling. Observed a cold holding display case with minimum internal ambient temperature of 48.7F as measured by inspector min/max thermometer. The exterior digital thermometer displayed a temperature between 33F - 39F, and the establishments ambient thermometers inside the cooler displayed between 49.5F -52F. TCS foods inside the cold holding case had internal temperatures between 59F - 67F. The person in charge removed all TCS food items from the display case at the time of inspection and stated a work order for service would be placed. Discussed not using the display case for cold holding until repair service has been completed and internal ambient temperature of 41F or below is maintained.
