On the menu, the consumer advisory for raw and undercooked animal proteins (like yellowtail, ribeye, filet mignon, Caesar dressing, burgers, etc) has the reminder statement but lacks asterisks and disclosure. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Inspector emailed Consumer Advisory guidance document. Email inspector the correct Consumer Advisory within about a week. Corrective Action: Correct prior to re-inspection.
