Observed a sheet pan with a carton of eggs being stored on a rack waiting to be used for prep. Eggs were stored above ready to eat bakery toppings. Observed reduced oxygen packages (ROP) of raw duck being stored in the reach in freezer by the bakery. Packages had the date 12/7. Per chef, the duck was packaged in ROP on 12/7. If holding temperature/time controlled for safety (TCS) foods in ROP, you must have approval (a variance) in order to hold the foods over 48 hours.
