Observed white bean soup tightly sealed, stored in large 12 inch square plastic container, in walk-in with an internal temperature of 45*F. Person in charge stated food was prepared and cooled over 13 hours prior to inspection. Cooling logs noted temperature of 70*F at 2 hours, but no documentation of temperature at 6 hour mark. Person in charge voluntarily discarded. PRIORITY VIOLATION-3-501.14 - Priority: Cooling. Temp logs indicated that the final rinse temp has been lower than the requirement (>160*F) on some days. PIC called for service at time of inspection and advised staff to sanitize all dishes at the 3 compartment sink. A sanitizer solution was set up at the 3 compartment sink to sanitize all dishes from dishwasher.
