Predefined Comment: No County legal action will result from this inspection.Discussed in-use gas butane burners that had previously replaced the approved electric models a few years prior. No grease filtering hood in establishment. Reviewed ensuring that surrounding areas remain clean and that equipment is not used cook grease laden foods without the use of a ventilation hood. A remodel for a ventilation hood, or a self-enclosed electric convection oven, may be required to cook grease laden foods in the establishment. Operator will contact department for any questions or concerns.

Observed raw in-shell eggs (52*F-56*F), whole milk, rotisserie chicken, half and half, and whipping cream at 45*F-56*F located in main kitchen standing reach-in unit. Ambient air temperature of unit was at a minimum of 49*F. Per person-in-charge (PIC), food items were placed in unit the day prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed main kitchen standing reach-in unit with ambient air temperature at a minimum of 49*F at time of inspection. PIC could not identify when said unit went out of temperature. PIC stated unit will not be utilized to hold TCS foods until repairs can be made. Establishment has sufficient cold holding capacities. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
