Observed all tcs foods inside two door falcon reach in unit in temperature danger zone 41*F-135*F. Foods included: American cheese slices; raw ground beef; raw chicken; raw pork; hamburger patties and ham all 49*F-52*F. Notified Person In Charge (PIC). PIC confirmed internal temperatures and had employees move all foods to main walk in unit to cool to 41*F verified after 30 minutes. Per employee the food was restocked 2 hours prior to inspection start time. Unit ambient temperature is at 47.8*F with inspector min/max thermometer. Unit thermometer is varying 43.9*F-51*F. Corrective Action: Corrected at time of inspection.

Observed stand up fridge across from cash register to have an ambient temp of 47*F. TCS items in the fridge temped at 47*F including milk, opened coffee creamer, and opened evaporated milk. Person in charge stated that the fridge digital thermometer read high at 11am, unsure how long fridge had been out of temp. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Maintenance was called to fix fridge. Corrective Action: Corrected at time of inspection.
