Observed cooked shrimp in reach in cooler at 55-59ºF, adjacent to beef that was recently cooked and placed into the reach in cooler. Instructed operator to move shrimp to walk-in cooler to be rapidly cooled. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked beef in reach-in cooler with an internal temperature of 105-110ºF. Per employees, beef was cooked within the hour. Observed several containers of fried chicken in plastic containers sitting on counter. Per PIC, chicken was cooked within the past 30 minutes. Internal temperature of the chicken was between 125-140ºF. Discussed ensuring that the walk-in was used for cooling and provided education on cooling process and the temperature benchmarks. Person in charge moved all items to the walk-in cooler in order to complete the cooling process. Corrective Action: Corrected at time of inspection.
