#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Packaged breakfast burritos containing eggs, cheese, sausage, and potatoes with an internal temperature of 60 degrees F holding on a tray on the counter. PIC stated that the burritos are pulled out of the freezer and placed on the tray for three hours of breakfast and then put back into the freezer. Discussed moving the burritos into a time as a control procedure for breakfast and then discarding them after four hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed small counter top refrigerator measuring with an ambient temperature of 51 degrees F. Yogurt and packaged burritos stored in refrigerator measured with internal temperatures ranging between 54-68 degrees F. These items had been in the refrigerator for approximately 3 hours and were moved back to large refrigerator in the back for rapid cooling. The small refrigerator will not be used to store TCS foods until in good repair and able to maintain temperatures at or below 41 degrees F. Discussed cold holding.
