Inspector's notes

Observed a container of breakfast sausage cooling with a lid on inside the reach-in cooler. The sausage had an internal temperature of 76*F and had been inside the reach-in for roughly an hour, from breakfast. PIC left lids slightly open and relocated the container of sausage to the walk-in cooler where it was later observed at 45*F and dropping. Discussed importance of air circulation during the cooling process. Corrected at time of inspection.
