Observed cooked pork and duck with an internal temperature of 48*F in metal container in ice bath. Container was not fully submerged in ice bath. Person in charge (PIC) stated food items have been in ice bath for about an hour. PIC moved items to walk-in cooler to rapidly cool down. Discussed with PIC to use smaller containers and fully submerge containers in ice bath for more efficient cold holding.

Observed paper towel dispenser in disrepair at handwashing sink located in warewashing area. Hand drying provision at handsink in question observed inaccessible at time of inspection. PIC stated dispenser's battery connection is loose. PIC stocked handwashing sink in question with paper towel roll at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection. 5-205.11 - Priority Foundation: Using a Handwashing Sink-Operation and Maintenance. Inspector's notes

Observed pate' (10/05) cooked with liver and butter with datemarking past 7 days in walk-in unit. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Observed cooked pork belly dated 10/08 in walk-in unit at time of inspection. PIC stated cooked pork belly was frozen on prep day and was pulled on 10/14. Informed PIC to have freeze dates/pull dates indicated on datemarking to ensure RTE food items are not used/kept for more than 7 days. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Core-3-501.13, C: Thawing --- Observed frozen raw fish labeled "KEEP FROZEN" thawing in ROP-packaging (REDUCED OXYGEN PACKAGED) in walk-in unit. PIC stated fish is delivered frozen in ROP-packaging and is slow thawed under refrigeration in walk-in. Fish was moved about 30 minutes prior from freezer to walk-in to be thawed, per PIC. Keeping ROP fish that bears a label that it is to be kept frozen until time of use in its ROP packaging in the thawed state. Fish must be removed from ROP prior to thawing or immediately upon completion of thawing. PIC removed fish from ROP to be thawed at time of inspection. Correct By: Corrected At Time Of Inspection
