Observed two covered containers of cooked carnitas and cooked chile verde at 52*F-60*F. Per PIC, food was prepared the night prior. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Discussed effective cooling methods with PIC, including using shallow pans, leaving food uncovered while cooling, and using ice as an ingredient. Corrective Action: Corrected at time of inspection.

Observed cooked pork with no datemarking in walk-in unit. Cooked pork is being thawed, per PIC. PIC stated food item is frozen on day of prep and pulled when needed; item is not refrozen after being pulled. Notified PIC that RTE frozen items are to be datemarked with prep and freeze date to ensure food items are not served past a total of 7 days. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Provided datemarking resources via email. This advisory was conducted (in Spanish) to discuss the various requirements of the salsa packaging machine and the salsa packets themselves. The owner was present and we discussed the following topics:1. The certification of the equipment2. The cleaning and sanitation of the equipment3. Cleaning procedures and documentation4. Variance submission and requirements5. Laboratory submission of the salsas and salsa packets6. Proper labeling of the salsa packets7. Date marking and refrigeration of packets if found by laboratory to be TCSThe owner stated that there are too many unresolved challenges (requirements) regarding the equipment and salsas right now, and has already ceased using the equipment. They will continue to fill small salsa containers with lids by hand and remove the piece of equipment from the kitchen. The owner was advised to notify MCESD prior to purchasing and using salsa-filling equipment, and they agreed.

Both red and green salsa are packaged and are date marked to be kept for 7 days. Individual plastic bags are not labeled or date marked. Discussed concerns regarding refrigeration and date marking of salsa once it is provided to customer. Also discussed how salsa packaging machine is not NSF approved (sticker on unit is not valid), and that portions of the machine are not easily cleanable (wand and tubing). PIC was advised to discontinue use of machine unless evidence can be provided that the machine is NSF approved.
