Observed Greek Feta salad containing Feta cheese in metal container in self-serve cold-top at 46*F-47*F, via probe thermometer. Per Person-in-charge (PIC), Greek Feta salad had been in cold-holding unit for approximately 2 hours. Greek Feta salad was relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. All other TCS food items in cold-top were at 41*F or below at time of inspection. PIC determined cold circulating air was blocked by food item in the back of cold-top that exceeded fill line of container. PIC rearranged containers in cold-top and flattened food to be below the container fill line. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed cooked chicken wings (128'F) in self-service steam unit located in front of deli display unit. Water in unit measured at 100'F. PIC stated chicken was cooked about 30 minutes prior and was placed in steam unit to be hot-held. PIC checked unit and stated the unit had not been turned on. PIC turned on unit at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Unit measured above 135'F at end of inspection. Corrective Action: Corrected at time of inspection.
