Prior to inspection person in charge informed me of recent completed maintenance to walk-in refrigerator. Foods (cut lettuce, pepperoni, parmesan cheese, etc.) were had an internal temperature of 48-50*F, and had last recorded temperature of 41*F within 4 hours of inspection. Ambient temperature of walk-in holding at 38*F and below.
