Inspector's notes

Observed cold holding unit for pizza prep line to not function. Establishment has alternative cold holding unit and work order is placed. Person in charge (PIC) placed ice in unit to keep foods cold. Several TCS foods improperly cold held, including sausage, pepperoni, ham, cut cherry tomatoes, roasted onion, and roasted peppers. PIC stated that food had been in the unit since the previous day. See embargo list for all TSC foods and temperatures. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Discussed with PIC methods to keep food items cold and safe until unit is repaired such as adding more ice, taking temps of all TCS foods every 4 hours, storing food in walk-in over night, and adding additional pan of ice under each TCS food pan. Corrective Action: Corrected at time of inspection.
