5-103.11 - Priority Foundation: Capacity-Quantity and Availability Predefined Comment: Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. After discussion with the person in charge it was determined a recent power failure had damaged the water heater near the back of the establishment. Some hot water under pressure is available within the establishment. Observed maximum water temperature at the handwashing sink near the entrance at 115°F. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishment. Predefined Comment: Provide adequate hot water at all sink fixtures prior to re-inspection. Corrective Action: Correct prior to re-inspection.

Observed a food worker pick a sticker off the ground with gloved hands and then go bag and handle ready to eat bread without washing their hands and changing their gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.
