While the establishment has multiple certified food protection managers, no active managerial control is being preformed at time of inspection. Observed multiple priority violations. No person in charge is overseeing employees’ monitoring of food temperatures during cooling (Violation #20). Date marking of ready to eat TCS foods is not being monitored by person in charge (Violation #23). Ready to eat foods are not being monitored and discarded in a timely manner to endure foods are not adulterated (Violation #13). Reviewed person in charge duties to ensure compliance with Code requirements.

Inspector's notes

Observed three containers of cooked refried beans/ 46-49°F in the walk-in coolers. Beans were cooling in containers more than 4 inches deep and covered in tightly wrapped plastic wrap. Observed condensation on the interior surface of the plastic wrap. After discussion with the person in charge it was determined the beans were cooked yesterday and had been cooling since.

Observed cut lettuce dated 3/20 and cooked vegetable soup dated 1/15. Observed cooked mac & cheese, diced tomato & onion salsa, cooked black beans, hard boiled eggs, and enchilada sauce (contains cooked tomatoes) with no date mark. After discussion with the person in charge it could not be determined when the ready to eat TCS foods were prepared.
