At time of inspection, observed the bar dish machine in use with a chlorine sanitizer concentration of 0 PPM. Chlorine sanitizer must measure be between 50-100 PPM. Upon further inspection it was determined the sanitizer supply was empty. After replacing the sanitizer supply, priming the sanitizer, and running the dish machine multiple times, the chlorine concentration measured at 50 PPM. Discussed utilizing chlorine test strips to monitor sanitizer concentration. Corrective Action: Corrected at time of inspection.

Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking. Observed cooked chicken wings date marked 1/18 in the walk-in cooler. After discussion with the chefs, it was determined the chicken wings had been frozen since 1/19 and thawed on 2/13. The chicken wings had been stored in refrigeration for less than 7 days. If ready to eat TCS foods are frozen, they should be labeled to include the date the food was prepared, the date the food was put in the freezer, and the date the food was removed from the freezer to thaw in the refrigerator. The total time in the refrigerator cannot be more than 7 days. The day of preparation shall be counted as Day 1. The freeze and thaw dates were known by the chefs and were marked on the container at time of inspection. Observed sliced ham in the reach in cooler near the dish machine with no date mark TCS food prepared and packaged by a Food Processing Plant that does not meet the criteria to be exempted must be clearly marked at the time the original container is opened and is held for >24 hours to indicate date/day the food shall be consumed on premises, sold, or discarded. After discussion with the chef it was determined the ham was removed from the original packaging and sliced on 2/13/2024. The ham was date marked at time of inspection.
