Observed the following ready-to-eat (RTE) foods: sausage patties (48'F), egg patties (47-49'F), cream cheese (48-51'F) being stored within main prep table adjacent to the service window at time of inspection. Per PIC, the items were placed in the unit about 1.5 hours prior to inspection. Discussed proper cold holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed main prep table operating at 46-53'F via min/max thermometer at time of inspection (See Violation #22). Per PIC, they regularly maintain the prep table open during assembly which causes temperatures to rise. Discussed mitigating temperature abuse by conducting routine servicing of cold-holding units with PIC. PIC stated that they will have a work order submitted to have the unit repaired prior to the reinspection date. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below.
