Observed 3-compartment sink set up from right to left as: rinse, sanitize, wash. Washed utensils and equipment shall be rinsed so that abrasives are removed and cleaning chemicals are removed or diluted through the use of water or a detergent-sanitizer solution by using the following procedure: Use of a distinct, separate water rinse after washing and before SANITIZING if using a 3-compartment sink. Discussed with person in charge (PIC) why rinse step must be in the middle compartment of the 3-compartment sink. PIC had rinse step moved to middle compartment. Corrective Action: Corrected at time of inspection.

Observed two rice scoops in bins of water (75°F) held at room temperature. Alerted staff who immediately washed, rinsed, and sanitized the scoops and put them in fresh water in the nearby refrigerator. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at the time of inspection. Corrective Action: Corrected at time of inspection.
