Observed prep refrigerator near the freezers, measuring with an ambient temperature of 53 degrees F. Tofu and cooked mushrooms stored in the refrigerator measured with an internal temperature of 49 degrees F. All other items stored in the refrigerator was non TCS food items. The Tofu and mushrooms had been stored in the refrigerator for approximately 1 hour and were moved to the walk-in refrigerator. Discussed cold holding. Refrigerator not required for the flow of business. Adequate alternative refrigeration is available. 2nd consecutive violation Correct By: Corrected At Time Of Inspection
