Written procedures included: 1) how often the supplies at each hand wash sinks are checked by staff, 2) who will be checking the supplies of each handwash sink, 3) stipulation stating last person to use up supply of paper towels/soap at a handwash sink shall also be responsible for restocking said handwash sink supplies, and 4) stipulation stating damp/wet rags are not to be used as hand drying provision.

Per PIC, eggs were cooked 40 minutes prior to inspection and cooling down before being placed into prep cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC moved cooked eggs into two-door cooler to rapidly cool cooked eggs. Corrective Action: Corrected at time of inspection.
