Inspector's notes

Observed 48°F-54°F internal temperature range, per probe thermometer, of nacho cheese, milk, queso cotija, Pico de Gallo, and cut cabbage inside prep cooler next to blender at front of establishment. Per person in charge (PIC), nacho cheese was removed from functioning cold holding unit three hours prior to inspection. PIC stated listed TCS foods, (see embargo list), were placed into prep cooler night prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. All TCS foods (see embargo list) improperly cold held were discarded by PIC at time of inspection. Nacho cheese improperly cold held was relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Establishment shall repair prep cooler such that it maintains TCS foods at 41°F or below prior to re-inspection on 7/22/25. Corrective Action: Correct prior to re-inspection.

PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrected at time of inspection.
