Inspector's notes

Observed a partially covered container of hash browns in the walk-in refrigerator at 66-70 Deg. F. in the center. Per operator the item was placed in the walk-in at 140 Deg. F. at 10 am. Time Temperature Control for Safety Foods (TCS) must be cooled from 135 Deg .F. to 70 Deg. F. within 2 hours and from 70 to 41 Deg. F. with-in an additional 4 hours no more then 6 hours. Suggest cooling a dense item such as this in uncovered sheet pans either in the walk-in or the available blast chiller. The item was embargoed at the time of inspection.
