Observed accumulation of dust on fan guards in walk-in cooler. Discussed cleaning fan guards to prevent potential contamination. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

County legal action may result from this inspection.Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Applications with supporting documentation can be submitted via the customer portal "Permit Center" online at maricopacountyaz-energovweb.tylerhost.net/apps/selfservice#/home.Observed processing room with hand sink, prep sink, packaging equipment, and other processing equipment. Per person in charge there are three sauces (teriyaki, stir fry, and orange chicken) that are made onsite by combining ingredients and putting into gallon sized bottles. Lemonade is also made here. These four items are then stored and sent out to various restaurant locations. Also observed containers of cut raw meat out of original package. Per manager these items are cut and portioned at their processing facility and sent back here for cold storage. Apply for a remodel permit within 10 days for processing room/food production permit.

Observed Simple Green stored above rice bags in dry room. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. Corrective Action: Correct prior to next routine inspection.
